Lactose Free Cookies

Welcome to the first of our lactose intolerance recipes. Here we are going to show you how you can make delicious lactose free cookies.

The ingredients you will need are:

  • 1 Cup of Soft Butter (Lactose Free)
  • 1 Cup of Brown Sugar (Packed)
  • 1 Cup of White Sugar
  • 1 Cup of Walnuts (Chopped)
  • 2 Cups of Semi-Sweet Chocolate Chips (Lactose Free)
  • 3 Cups of All Purpose Flour
  • 2 tsp of Vanilla Extract
  • 2 tsp of Hot Water
  • 2 Eggs
  • 1 tsp of Baking Soda
  • ½ tsp of Salt

How to make:

Firstly, preheat your own to 350F. In a mixing bowl, begin combining the lactose free butter with both the white and brown sugar until a smooth cream is formed. At this point, beat the eggs in using a fork or wire whisk, one at a time. Once the eggs have been beaten in thoroughly, now add the vanilla extract and also mix in thoroughly.

Using a cup, dissolve the baking soda into the 2 tsp of hot water. Once dissolved, add this into the butter, sugar and egg mix along with the salt. Thoroughly mix in the lactose free chocolate chips, walnuts and flour. Using a spoon, place this mixture onto a non-greased baking tray to form even and separate cookies.

Bake the cookies for around 8-10 minutes. Watch them carefully as they can soon turn from the perfect cookie into a burned cookie.

Note: If you have trouble finding lactose-free chocolate chips, you can make your own by purchasing a large enough bar of lactose free chocolate. Simply place the chocolate inside of refrigeration until it becomes brittle. Keep the chocolate inside its wrapped and begin to work with a toffee hammer until chocolate ‘chips' are formed.
